Bean Recipes

I can’t remember a day coming home from school without the phenomenal aroma of a bean dish cooking on the stove.
It didn’t matter if it was going to be for dinner later; you got a bowl then if you wanted…and, oh how I wanted.
There is nothing that tastes any better; yes, it is right up there with homemade chicken soup for healing and soothing.
Of my four brothers and two sisters, it was the second eldest brother, Salvatore, and I who seemed to enjoy the meals the most.
I have included websites that also give recipes, but I don’t remember mom doing anything extraordinary…onions/garlic - beans/macaroni: those were the staples.

Beans need to be soaked the night before; then rinsed next day.
Put them on the stove to boil in large pot with a little salt.
Sauté onions/garlic - add;
Mom’s secret ingredient was a scoop of her homemade sauce.
After adding, lower gas to simmer; cook one hour.

Add spaghetti to pasta va zoo, chick peas, fava beans: rice to lentils.
Raise gas high covered for one minute: boil - turn off; 20 min. later: done
It easily freezes - large pot enough for four three times over.
